Bridal Week

Hey everyone!

As promised, this week is “Bridal Week” here on White Lily Cupcake! Thanks to Helen Owen for the huge help with this week’s cupcake decorating! Helen runs a beautiful little Etsy shop based in Australia called Rice Paper Rose. She sent me some, and by some I mean thirty, of her amazing, beautiful clay roses to decorate this week’s Bridal Cupcake with! So what is this week’s Bridal Cupcake? A simple, beautiful white cake cupcake topped with classic white buttercream frosting decorated with roses!

I love the way the clay roses pull everything together!  You could use these adorable little cupcakes for a Bridal Shower, Engagement Party, or even the Wedding if you’re just not a cake person!

Celebrating Moms!

Warning: This is going to be a little longer of a post then normal! It’s worth it though, I hope.
Hey everyone! How has your week been going? Mother’s Day was last Sunday for those of us in the U.S. How did you all spoil your moms or, if you are a mom, how did your family spoil you? I hope it was a great day for all of you moms out there!

I’m a mom to a little four legged puppy but I got a Mother’s Day gift this year. I had to work the day before Mother’s Day and a pastor brought in a ton of lovely carnation flowers for all the moms at the nursing home. It was so sweet and they are beautiful flowers! Well after he gave all the moms one, he had some left over so he offered them to the mothers that were working. He offered me one and I told him “Thank you but I’m not a mom” to which he replied “Well you can have one anyway because you look like a mom to me!”

How adorable and cute is this pink carnation!? I love it and it has spent the last four days sitting on the kitchen table making the whole kitchen look super cute!

So what did I do for my mom to celebrate? I bought my mom some nice, expensive vanilla from a little local(!) shop in town that she has been drooling over for a while and I made her cupcakes! They also happen to be this week’s super yummy cupcakes!

Say hello to the scrumptious carrot cake cupcake! This cake is moist and delicious! Instead of using shredded carrots in the recipe, I tried my hand at homemade baby food! To really make a carrot cake perfect, try steaming slices of carrots until they are soft then toss them in the blender (or food processor) and slowly add a tablespoon of the water you steamed them with until you have them looking like baby food, soft and creamy. Add this to your cake mixture and you’ll have crowds of people begging you to make more! I topped mine off with smooth cream cheese frosting and it was the perfect pair! I only make a half a batch (12) of cupcakes when I make my weekly cupcakes and they usually don’t last long, about two days. These carrot cake cupcakes though were going in 24 hours this week!

I’ve got a question for all you readers. I’ll always post weekly on Thursday for the Cupcake of the Week but there are so many more wonderful yummy treats in the world of baking that I want to share with you all! A Week Full Of Cake

Hey everyone! It is May and this year that means a very busy month for me! Yesterday was my baby brother’s 18th birthday! To celebrate we had a basic yellow cake with vanilla frosting and $30 worth of scratch off tickets. It might not seem like much but he loved it and it’s what he wanted. This was not only a big day for my little brother but it was also a big day for my parents because he was the last child my parents had to raise to the age of eighteen. The only thing left is to get him out of high school and that happens the 19th!

I’m sure you are all interested in this week’s cupcake though instead of my little brother’s birthday. This week our dessert plate has triple chocolate cupcakes on it!

This moist chocolate cupcake is filled with a thickened chocolate ganache and topped with a delicious chocolate frosting! Stacked all together and decorated with a flower design, these make for a great dessert piece (and a mild sugar rush!)

This cupcake was made to celebrate my cousins coming to Illinois for a visit. My cousin (who I am very close to) graduated college this past weekend with a bachelor’s degree. Her brothers, sister-in-law, and two year old niece all flew up from Arizona to watch her walk across the stage! So in honor of everyone being home and getting to spend time together I made Meringue Kiss cookies for my cousin, S’more cupcakes for her two year old niece, and these yummy Triple Chocolate Cupcakes. The chocolate cupcakes were a huge hit but everyone loved the cookies and S’mores too.  My little cousin had so much chocolate on her face! She also got her first ever glass of chocolate milk thanks to her great aunt!

Sweets for Breakfast: Cupcakes & Coffee

“Remember when your mom always told you not to eat ice cream for breakfast? Well don’t listen to her.  Sugar is best eaten at breakfast. It gives you a boost of energy to get you going and time to burn it all out of your system.”

A few semesters ago in my college studies, I had a science teacher tell me this. Of course being the gigantic sugar addict that I am, I loved hearing this!  So when I found the following cupcake recipe in Better Homes and Gardens: Cakes!  Magazine, I fell in love. If you love homemade food, this magazine is a great buy!

This is a Mochaccino Cupcake full of yummy chocolate and coffee goodness! This soft coffee and chocolate cupcake is topped with a sweet coffee buttercream frosting and rich in flavor!  I love this cupcake. It’s the perfect melt-in-your-mouth dessert that is quick to make. It also makes a pretty great cake!

Add a half a cup of coffee to your favorite chocolate cake recipe and a quarter cup of coffee to your favorite buttercream frosting to make these flavor packed cupcakes!

(Side Note: All cupcakes can also be turned into cakes, it just takes longer to bake! Cupcakes are also a great way to test a new style without having to have too much of it!)

Make these up the night before, get some sleep, and then wake up to a delicious energy boost and a cup of your favorite coffee!

Cupcake Challenge Week One: S’mores

Since the weather is getting somewhat warmer here in Illinois and its late April, I decided to make a S’mores cupcake for the first week of my challenge! Since I can’t go out camping and enjoy hot dogs and S’mores over an open fire (we have gotten a lot of rain lately and are taking precautions against flooding) I decided to bring them to my home!

This chocolate cupcake has a graham cracker crust bottom and is topped with a toasted marshmallow meringue frosting. I used a whisk and handmade the batter and the crust. Sadly the meringue had to be done with an electric mixer since I can’t whip fast enough for it. A chocolate hater and S’mores avoider enjoyed these cupcakes! Perfect for backyard camping trips or unique birthday parties, these fun cupcakes add a hint of summer to your spring days! These cupcakes are also super simple to make!

Just use your favorite chocolate cake recipe (or box mix if you are running short on time), a graham cracker crust recipe, and a simple meringue recipe.

  1. Preheat your oven to 350 and line two muffin pans with cupcake liners.
  2. Make your chocolate cake batter and your crust mix in two separate bowls.
  3. Take a tablespoon of the crust mix and place it in the bottom of each liner. Press together with a flat bottom glass or measuring cup to form a bottom crust.
  4. Bake in the oven for 5 minutes.
  5. Remove the trays from the oven and fill three quarters (3/4) of the way with batter.
  6. Bake for 18 to 20 minutes or until a toothpick can be cleanly removed from the middle of the cupcakes.
  7. Let cool for 10 minutes in the pans then remove and allow to fully cool, about 20 to 30 minutes.
  8. While cupcakes are cooling, make your meringue recipe.
  9. Fill a pastry bag with the meringue and pipe onto your full cooled cupcakes. *If you don’t have a pastry bag, you can use a knife to spread the meringue on your cupcakes too.*
  10. Place the cupcakes on a flat cookie sheet and place back in the oven, using the broiler setting, for about 5 minutes or until the meringue is lightly toasted brown.

Serve and enjoy!

I’ve working in fast food, a nail salon, Wal-Mart, a hotel, and am currently working in a nursing home. I also run my own side business Knitted Lily Creations on Etsy. I graduated high school in 2010 and will graduated May 11th with an Associate’s Degree of Art and Science with a major in Liberal Arts. My little family includes a boyfriend of three years and a two year old mixed breed puppy. I love art and have two pieces of it on my body.

I’ve got a lot on my plate from life right now and really need a break every once in awhile.  I’ve always loved baking and have been doing it since I can remember with my dad. I love it so much that I eventually want to open my own bakery. This year though my baking has taken a new turn and I’m actually sharing my creations with not only my parents and siblings but my Aunts and Uncles, cousins, and even random strangers who are just having bad days! Baking has always been my passion and now it’s also the break that I need. So I decided to make my break from my busy life an annual deal. I’ve decided to challenge myself for the next year to a new cupcake design every week!

I’m going to be documenting my cupcake challenge, my small business, and everyday life for someone just starting out. I’ll also probably throw around ideas for my future bakery every once in awhile too.
